We are stocking up on pancake recipes. Why? We don't really need a reason..it's pancakes! You can't really have enough pancake recipes in your cookbook. So grab your book and save a space for these delicious coconut pancakes recipe.
These coconut pancakes are perfect to kickstart a lazy weekend when all you want to do is take it slow and just chill. You can easily pull them off early in the morning during the week but believe me, you'll want to take your time to enjoy this delight.
The recipe we are about to make is an absolute treat. And you don't really have to do anything extraordinary to make it happen. Both the pancakes and the drizzle that goes with them are made by mixing a few ingredients and voilà! In a matter of minutes you'll be enjoying a delicious stack of coconut pancakes.
The batter is the easiest pancake batter ever. Wheat flour and baking powder are the basic ingredients we need. To that, we are adding dates for a kick of sweetness and a pinch of salt to really let all the flavours come out.
Coconut milk and coconut flakes will give us that coco-nutty taste we are after, which is just incredible. But make sure you are using roasted coconut flakes and not just shredded coconut. It might seem like it's not a big deal but it's a game changer.
Roasted coconut flakes add a ton of flavour to our recipe. I think when they go through the roasting process and as it looses moisture, all the oils in the coconut become a bit more concentrated. Also, using roasted flakes gives our batter a better consistency. The extra water in shredded coconut result in a bit of a weak batter for our coconut pancakes.
The oils in the coconut flakes will add flavour and they'll also help us cook our pancakes. Coconut has a high oil content and that's enough to avoid our batter from sticking to the pan. It will also help the pancakes cook inside out.
As much as I love coconut and everything coconut, we do have to be a bit careful. We sometimes forget that this oils add up in our body and can result in gain weight. I hear a lot of people recurring to a vegan diet to lose weight and fail because of this reason.
With that said, these pancakes are not necessarily your best option when you are trying to lose weight. But they are definitely the best option when you are looking to treat yourself and indulge for the sake of your soul.
The tropical somewhat sweet flavour of these pancakes will make you feel in full vacation mode. Bananas, strawberries, and a bit of passion fruit on the side and you will be transported to a tropical island!
