Recently, I had the wonderful opportunity to dive into my mother’s cookbook. Flipping through pages and pages of scribbled notes, pictures, and handy little hints was like stepping back in time. It was wonderful.
About half way through the book, I stumbled across a page that had 6 simple ingredients and just a couple of steps to make it. Oh, and let’s not forget a couple of pinkish stains from her fingers as she no doubt got from the beetroot over the years. My mind flew back in time to all the amazing meals she served with this side dish. I also remembered how good it tasted, every single time. I asked her if I could share it with you and of course she said yes!
I distinctly remember her making large batches of this and using it throughout the week with many different meals. I also do the same thing. Best part is – it gets better and better with time. Second day after being in the fridge, it tastes amazing (more so than the day before) and continues to hold all of the earthy, fragrant flavours.
To make this recipe, you will need 6 ingredients and 40 minutes. Don’t be fooled by the time, it only takes 2 steps to make this salad, with most of the time required for boiling your beetroot.
In this recipe, we use apple cider vinegar, pepper, beetroot, sea salt, sunflower oil, and yellow onion. From these ingredients combined, we are offer a good source of dietary fiber, vitamin C, folate, manganese, sodium, potassium, and magnesium.

This side salad this really easy to store. In fact, it will last up to a week stored in the fridge, in an airtight container. So go ahead and make a batch at the beginning of the week so you can use it whenever you want. It’s what I do!
