Amaranth Power Bars with Hemp Seeds

Somedays it's hard to make it from one meal to another, we need loads of energy and seems like a little picker upper is the only thing that will get you to your next meal in one piece and without injuring someone product of you being hangry.

Power bars are the best solution to this problem, not only they are easy to make, you can take them with you wherever you go, you can make a bunch ahead of time and keep them in the fridge and the best part is that they are equally delicious as they are healthy. 

We are using all natural ingredients that won't send you on an insulin spike, what this means is that you won't get that sugar high that as soon as it's over your energy levels go downhill fast, as fast as you can say Power bar.

These bars will fill your belly and will load you up with the necessary nutrients that will allow your body to keep going and your brain to function properly without that foggy feeling that an empty stomach can give. 

We will need 10 ingredients, while it may sound like a lot, many of these ingredients you probably already have in your pantry, the rest are easy to get at your local market. Bulk stores are a another great place where to find these kind of ingredients, bonus point if you bring your own containers to avoid using plastic bags.

We have all kinds of good stuff, here are some of the ingredients and just a few of the benefits you'll be getting from each:

Amaranth: protein, antioxidants, fiber and anti inflammatory properties. Balances cholesterol levels, aids digestion, helps lose weight, helps repair and strengthen blood vessel walls.

Goji berries: protein and antioxidants. Protects brain cells, good for skin care, prevents liver damage. 

Hemp seeds: Relieve insomnia, prevents osteoporosis, reduces stress levels, helps prevent anemia and headaches.

Sunflower seeds: Prevents cellular damage, increases energy levels, promotes growth and development, aids in sleep.

Walnuts: essential fatty acids (Omega-3), promotes normal cholesterol levels and blood pressure, protects the brain against degeneration and disease.

Apples: fiber and antioxidants. Aids digestion, helps treat anemia, boosts the immune system, controls diabetes, detoxifies the liver, boosts brain health, treats asthma. 

Dried Apricots: Improve skin health, stimulate circulation, improves vision.

Dates: fiber and iron. Great energy booster, relieves constipation, strengthens bones, relieves intoxication, maintains a healthy nervous system.

Cinnamon: antioxidants and anti inflammatory properties. Helps reduce heart disease, and fight infection, repairs tissue damage.

So thats on the health side of things, now on flavour. These bars remind me a bit of those dried fruit bars for kids from the grocery store, although, not to toot my own horn, but I think the ones we are about to make are a lot better; first of all we know exactly what's going in them by making them ourselves and, I love the fact that you end up with little bits and pieces that make the texture much more interesting.

Ingredients

For the dry ingredients

  • ¼ tsp allspice
  • ⅒ cup amaranth popped
  • ¼ tsp cinnamon ground
  • ⅒ cup dried goji berries
  • ⅒ cup hemp seeds
  • 1 dash sea salt
  • ⅒ cup sunflower seeds
  • ⅒ cup walnut halves (chopped)

For the wet ingredients

  • ⅒ medium apple (grated)
  • ⅒ cup date
  • ⅒ cup dried apricots
  • ⅒ cup extra virgin coconut oil
  • ¼ tbsp vanilla extract

Directions

  1. Preheat the oven to 300 F (150 degrees) and cover a 8 x 8 inch (20 cm x 20cm) baking dish with baking paper.
  2. You can either use a food processor and add the wet ingredients first and then the dry ones or you puree the wet ingredients with an immersion blender and mix them with the dry ingredients in a bowl.
  3. Add the batter to the baking dish and bake for about 20-25 minutes.
  4. Let the power bars completely cool down before you slice them.
