How good is the feeling of a freshly found life-changing hack? Well, we love our cooking hacks and the one we are using today is definitely one of our best finds. Our Apple Crisp yogurt recipe is a classic baked dessert turned into an easy no-bake breakfast.  Same taste in half the time!

We are huge fans of apple pies and apple crisps at vegan.io. Especially now that fall is here and days are getting bit more chill all we need is cozy, heartwarming and delicious food. And in my book, there is nothing more heartwarming than the taste of cooked apples sprinkled with cinnamon and spices. 

I tend to go all the way when I like something, and this was not the exception. It felt unfair that apple crisps are reserved for dessert. In my mind, this sounded perfect for an early morning start. But there was no way I was going to get my baking game on that early.

Also, at home we much rather have nourishing light breakfast. It is hard to go about your day with a super full belly that makes you feel heavy and sluggish. For that reason, I always try to keep my breakfast recipes light and delicious. 

This recipe is very easy to make and is ready in a whiff, maybe 10 or 15 minutes. One would think apples take a while to cook but not really. The key is to let them simmer in just a little bit of water mixed with cinnamon, lemon juice and small pieces of date. Just keep a close eye on your heat so the water doesn't evaporate too quickly. 

Here's where the magic begins! The beautiful aromas of the apples simmering with the other ingredients will delight you. The water will thicken, the apples will become soft and you will want to stuff your face with your creation but contain yourself. It gets better.

In order to make our apple crisp breakfast worthy I had to change a couple of things to make it a bit healthier and lighter than the original recipe. So, first of all, we are definitely not having it with ice-cream instead we are adding soy yogurt. 

And to keep it as light possible, instead of adding regular crust ingredients we are going to sprinkle it with hemp hearts. They are heavily loaded with nutrients and are a great source of plant-based protein. But their main purpose here is to give us that crunchy texture we were missing.

I love serving this apple crisp yogurt in mason jars, they are great for single servings and for storing. Even though I much prefer to have this breakfast warm, sometimes I make a batch ahead of time and I store it in the fridge overnight.

Ingredients

For the apple crisp

  • 4 medium apple (chopped)
  • 4 dates (chopped into small pieces)
  • 2 tsps ground cinnamon
  • 1 lemon (juiced)

For the topping

  • 4 tbsps hemp hearts
  • 4 cups soy yogurt

Directions

  1. Add the ingredients for the apple crisp to a small pot with just a little bit of water covering the bottom.
  2. Simmer for about 10 minutes until slightly soft.
  3. Use a jar or a bowl and layer the apple crisp and top it off with the hemp hearts.
  4. Refrigerate if you like or enjoy it straight away.
