Have you ever had or even heard of apple pancakes? I guess they are not a thing but hopefully, that will soon change and this delicious breakfast recipe will get the recognition it deserves because it is so incredibly delicious! 

We've all heard of banana, blueberry, sweet potato, even chocolate pancakes. But rarely do we see or hear about apple pancakes. I don't know what it is but apple pancakes are not a big thing, you rarely see them served in restaurants and people don't talk about them that much. 

We want to make sure everyone knows what they're missing out on! So we made this simple but incredibly delicious recipe so you can make this pancakes at home and see for yourself what I'm talking about. You might even forget about any other kind of pancakes you've ever had before. 

Apple Pancake ingredients

There is so much flavour in this recipe. By adding apples to the batter we are making sure they're sweet and crisp. The cinnamon and the vanilla extract will give them a bit of a festive taste. So they are perfect to enjoy over the weekend. You will feel as if you're in the middle of the holiday season. 

Back home apples are a big deal, maybe that's why I get so excited about this recipe. We have any and every kind of apple you can think of. My personal favourites are the more "traditional" ones, like Elstar or Boskoop. But I'll eat them all. 

Apples are the most important fruit crop in Germany and they are subsidised by the government. That's why they are so incredibly cheap and why we have an abundance of them. So we really make the most out of them.

One of my favourite things made from apples is Apfelsaftschorle. This is Germans favourite drink aside from beer. It's basically a soft drink made by mixing sparkling water and apple juice. It's soooo delicious, and if you use the cloudy unfiltered apple juice it is even better!

I think having apples so easily accessible is a great thing. Apples are not only super delicious, they are incredibly healthy and packed with nutrients too. We've all heard "an apple a day keeps the doctor away". Well, these few reasons prove that to be true:

  • Aid digestive system
  • Probiotic effect
  • Reduce strokes 
  • Treat anemia 
  • Boost immune system 
  • Controls diabetes
  • Boost brain health 
  • Treat asthma
  • Detoxify the liver 
  • Improve vision and skin 
  • Lower cholesterol 
  • Help with weight loss
  • Improve bone health 
  • Prevent heart disease 

And these are just a few, the list keeps going and going. But for now, you get the idea. Apples are super healthy and since they are so cheap they are a great option to load up on nutrients and add to your daily diet.

Personally, all things apples make me incredibly happy and that's why I like this apple pancake recipe so much. The batter has apples, we are drizzling everything with apple sauce and we are throwing some slices of apple on top of our stack of pancakes for extra crunch!

Ingredients

For the dry ingredients

  • 2 tsps baking powder
  • 1 tsp cinnamon ground
  • ½ tsp sea salt
  • 2 tbsps sunflower oil
  • 2½ cups whole grain wheat flour

For the wet ingredients

  • 2 cups almond milk
  • 1½ medium apple (grated)
  • ½ cup apple sauce
  • 2 tbsps chia seeds
  • ¼ cup date (pitted)
  • ½ lemon juice
  • 1 tsp lemon zest (grated) (optional)
  • 1 tbsp vanilla extract

For the garnish

  • ½ medium apple (chopped)
  • ½ cup apple sauce
  • 1 dash ground cinnamon

Directions

  1. Use a big bowl and mix the dry ingredients, except the frying oil.
  2. Add the wet ingredients except the apple and the lemon juice to a blender and blend until smooth.
  3. Sprinkle the lemon juice over the grated apples and the chopped apples for garnish.
  4. Combine the wet and dry ingredients with the grated apples and set aside.
  5. Add a bit of the frying oil to the pan and heat it up.
  6. If you use 1/4 Cup measurement per pancake, one serving should be about 3 pancakes.
  7. When the oil is hot, add the batter and fry the pancake for 2-3 minutes from each side.
  8. Serve the pancakes straight away or keep them warm in the oven until you finished the whole batch.
  9. For serving drizzle with apple sauce and add the fresh apples together with a dash of cinnamon, enjoy!
