You probably immediately think of guacamole when you hear the words avocado dip. Today we are going to change that. We are giving a bit of a twist to your typical Mexican appetiser. A subtle change that will make a whole lot of difference. 

As many of you know I absolutely love avocados. So whenever I come up with a new use for them I get super excited. So I'm eager to share my new recipe with all of you. This time, I have one of the easiest recipes of all times and that gets me even more excited. 

You literally just put all the ingredients in a blender and blend until you get a smooth mix. You can customise this part. Some people like dips a bit chunkier but personally, I prefer them to be super creamy and smooth. And it is very easy to get that consistency having avocados in there.

Aside from being smooth, this avocado dip is also fresh and zesty. I added a handful of mint leaves to the blender to give that touch of freshness. Don't be tempted to use the dried stuff. We need the fresh leaves to get all the aromas and flavours impregnated on the avocado.

We are also adding the zest and juice of half a lime. This will add a bit of a sour, zesty taste and will enhance all the other flavours as well. Also, lime will help our avocado dip look pretty for a long while. 

There's nothing sadder than going back to your beautiful creamy bright green avocado dip to find it all brown. Since limes have a good amount of citric acid, a powerful antioxidant, adding the juice and zest will prevent your dip from browning. So, once your avocado is in the blender, don't wait too long to add that lime.

Avocados are naturally creamy but to get a much smoother texture I mixed in some soy yoghurt. This makes it thicker and gives it a bit more body while keeping it light and healthy. That's exactly what we are after, we want to keep it fresh and simple so we can add it to EVERYTHING!!

I usually make this avocado dip for these Chickpea and corn fritters but it goes well with so many different things. You can drizzle it over your food or use it as a dressing. Sometimes I simply serve it as an appetiser alongside some corn chips or veggie sticks so everyone can freely dip into it.

This avocado dip is quite healthy. It has about 107 calories per serving and since we are using only fresh, clean ingredients you will get a bunch of nutrients and benefits from it. 

Actually, when someone on a keto diet is looking for a dip to make their food more interesting, this avocado dip is the first recipe that comes to mind. Avocados are a low-calorie nutrient-rich veggie that is among the best things you can eat while on a plant-based keto diet.

Ingredients

  • 1 avocado
  • ¼ tsp black pepper (gound)
  • 4 tbsps fresh mint (washed)
  • ½ lime (zest and juice)
  • ½ tsp sea salt
  • ½ cup soy yogurt

Directions

  1. Add all the ingredients to a blender or use and immersion blender to make a smooth mixture.
