We have an incredibly delicious vegan dessert for your Christmas menu. These Baked apples with vanilla sauce are what dreams are made of. They are filled with goodness and the sauce is the equivalent of a cherry on top, absolute perfection!

In my world, there isn't anything more festive than the incredible smell of baked apples covered in spices. So, I made the most aromatic and flavourful vegan Christmas dessert ever. Apples filled with some other holiday essentials, such as almonds, hazelnuts, and pine seeds.

I seasoned the filling with allspice and cinnamon. And added maple syrup and lemon juice to the mix to really get all those Christmas flavours stuffed into these delicious baked apples. You will want to dive into the filling on its own but have some self-control, it tastes much better inside the apples.

Once the apples are baked your whole house will smell like Christmas. Serve these beauties while they are still warm and make sure not to forget that vanilla sauce on the side!

Ingredients

For the baked apple

  • ½ tsp allspice
  • 4 medium apple (wash and chop off the top, then remove the seeds from the inside, make sure you have enough fruit flesh left so the apple doesn't collapse when you bake it.)
  • 1 tsp ground cinnamon
  • 29 g hazelnuts (chopped)
  • 1 tablespoon lemon juice
  • 2 tbsps magarine
  • 79 g maple syrup
  • 2 tablespoons pine seeds
  • 4 tablespoons slivered almonds

For the vanilla sauce

  • 524 ml almond milk
  • 2 tbsps maple syrup
  • 44 g vanilla pudding powder

Directions

  1. Preheat the oven 360F (180 degrees).
  2. Use a bowl and mix all the ingredients for the filling and spoon it into the apples.
  3. Add the top of the apples and bake them for 20 minutes.
  4. To make the sauce add the almond milk, pudding powder and maple syrup to a saucepan, keep stirring until it thickens.
  5. Set the sauce aside and serve it together with the baked apple, enjoy!
