Baked Cauliflower in Herbs

We are so excited to have the holidays just around the corner! So we need to get ready with some mouthwatering vegan Thanksgiving recipes. This year I'm kickstarting our vegan festive season with a delicious Baked cauliflower in Herbs, a simple yet amazing recipe everyone will love! 

I know for a lot of families, Thanksgiving is all about traditional food. For us, the tradition is more about our loved ones gathered around a table covered with heartwarming food than it is about having specific dishes. With that said, for this year's vegan feast I created a whole batch of new recipes for you. 

I like making recipes that are easy but still worth this vegan feast we are talking about. I used to spend long hours in the kitchen cooking for the whole family. So I'd miss on hours of fun and by the time I was done I was ready to go to sleep. I had enough of that!

Baked Cauliflower in Herbs ingredients

We don't need to miss out and we don't need to spend all this valuable time cooking to have a nice meal. This is why I came up with recipes like this baked cauliflower that you can throw in the oven and do other things while it's cooking. And once it is ready it can just go straight onto the table for everyone to enjoy. 

There are three main steps to make this beautiful, incredibly aromatic, and super delicious dish. First, you have to prepare the marinade, then brush the cauliflower with it, and lastly, bake the cauliflower for a little while until it's thoroughly cooked. That's all!

I used really simple ingredients to make the marinade, but the combination of them is where it is at. We have olive oil, mustard, maple syrup, soy sauce, garlic, lemon juice for a bit of zest, and the ultimate star of the marinade, garden herbs.

I like to make the marinade a day in advance or at least a few hours, and keep it in the fridge. We will get the most out of the garden herbs if we do this ahead of time, your marinade will be super infused and flavourful by the time you are ready to use it. Your tastebuds will thank you later. 

We are cooking a whole cauliflower head. So, we need to make sure it cooks thoroughly without drying it out. For this, I brush the cauliflower with the marinade and cook it for 15 minutes. Then, I take it out of the oven and repeat the process two more times. So it will be brushed three times and baked for a total of 45 minutes. 

When its ready you can simply put it on a pretty dish and serve it straight away while it is still warm and steamy. Serve it alongside these Sweet Carrots and Kale, with a serving of our scrumptious Potato Puree and Vegan Mushroom Gravy. And there you have it, a true vegan Thanksgiving feast for you and your loved one!

Ingredients

For the baked cauliflower

  • 1 head cauliflower (washed and left in one piece)
  • 1 tbsp frozen garden herbs
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 2 tbsps light soy sauce
  • 1 tbsp maple syrup
  • 2 tbsps mustard
  • 2 tablespoons olive oil

For the sweet carrot

  • 1 dash black pepper (ground) (optional)
  • 1 lb carrot (cleaned)
  • 1 tbsp maple syrup
  • 1 tablespoon olive oil
  • 1 dash sea salt (optional)

For the kale

  • 1 lb kale (washed and roughly chopped)
  • 1 tbsp light soy sauce
  • 1 tsp olive oil

For the potato puree

  • ¼ cup almond milk
  • 4 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1½ lbs potato (remove skin and chop)
  • ½ tsp sea salt

For the garnish

  • 1 dash black pepper (ground) (optional)
  • 1 dash ground nutmeg (optional)

For the mushroom gravy

  • 1 dash black pepper (ground)
  • 4 oz button mushroom (thinly sliced)
  • ½ cup coconut milk
  • 1 tbsp dark soy sauce
  • 1 clove garlic (crushed with a knife)
  • 2 tbsps margarine
  • ¼ cup red wine
  • ½ tsp sea salt
  • 1 medium shallot (thinly chopped)
  • ¾ cup vegetable broth
  • 3 tablespoons wheat flour

Directions

  1. Preheat the oven to 390F (200C).
  2. Mix all the ingredients for the marinate in a small bowl and set aside.
  3. Brush the cauliflower with the marinate and bake it for 15 minutes.
  4. Take it out and apply the more marinate and bake for 15 more minutes.
  5. Repeat the brushing and bake 15 more minutes, so the cauliflower baked 45 minutes in total.
  6. Take it out and serve it with the side dished, enjoy!
