These Backed Pears stuffed with Oat Nut mix are a delicious vegan dessert. They are easy to make and an absolute favourite at any event. We love how heartwarming this festive dessert is and that it's actually a healthy dessert option.
I like making these baked pears for the holidays because it is an easy way to make an elegant vegan dessert that looks great on the table while being super easy. We only need 6 ingredients that are available at your local supermarket. So no running around to find fancy, expensive or rare things when all you want to do is hang out with the family and enjoy yummy food.
Somewhere, I read that December is National Pear Month. Whether this is an actual thing or not, I don't know. What I do know is that you will find plenty of pear options during the holiday season.
Baked Anjou pears turn out great, a lot of people say this is the best option for baking. However, I like using Bosc pears. The elongated shape and the golden brown color makes them really pretty when stuffed. And I usually find those more often than any other kind.
I cut the pears in half and leave the stem attached. This is just to give them a bit of character, so if you chop it off, no problem. Then, I scoop out some of the flesh and make sure I get rid of the hard bits and the seeds. Neither is fun to chew on.
We will mix all of the flesh with the yogurt. So make sure you don't get rid of that goodness. We also need to mix together the nuts, salt, cinnamon, and sugar with the oat mix. Drizzle a little bit of coconut oil and mix it all together really well.
I discovered that to save a step in the process, we can actually bake the pears already assembled. The pears will come out soft and tender. And the oat mix will slightly turn into this beautiful golden brown color.
We can throw the tray in the oven for 30-40 minutes and let it do its magic. You will know when they are ready once the oat mix has changed color. Some people like them slightly roasted and some people go a bit harder on them. I like to stay in the happy medium.
Lastly, remember the little leftover pear flesh we saved earlier? Well, we are making a delicious vegan yogurt mix with it. We simply need the pear, soy yogurt, and a bit of orange zest. This mix is so easy and so delicious, you can use it for a ton of other recipes. I make a good amount and keep it in the fridge and use it for breakfast recipes or even as a snack.
I suggest serving these when they are straight out of the oven. They will be warm and steamy, and will make your entire home smell like a holiday for sure
