Any banana bread lovers in the house?
(I just assumed everyone raised their hand).
Same here!!
That is what we are making today, and not any kind of banana bread, the vegan kind, without refined sugar and with some chocolate in it. Incredibly delicious!
Before I go any further let me give you a quick tip. We will obviously need bananas for this recipe, but here's the deal, the more ripen the better. Actually, you can really push it, the more they ripen the sweeter they are and they'll add moisture to your loaf of bread.
All this is good to know, you'll never have a banana go to waste!
I've saved many bananas from going to the bin this way, as soon they are past the point where no one at home will eat them, a bit too brown on the outside, a bit smooshy on the inside, I know is time to whip this recipe out.
This banana bread is a great alternative for any other coffee bread, cake, or pastry, not only because it is absolutely vegan but it is also made without any refined sugar, which we well know how harmful it can be to the body.
Instead of refined sugar we are using fresh fruit, bananas, and dry fruit, dates, combined, they add just enough sweetness and the end result will be great! Even though the taste is on point, you won't be craving for more since it is not overly sweet, this is the reason we tend to binge on sweets.
Have you ever used dates as a sweeter?
Dates are a great way to add some sweetness to your life. They might be small but they're packed with fiber, natural sugars and many vitamins and minerals that put them straight into the superfood category.
We will only be using a cup but that itself provides so many benefits it's hard to name them all. Dates help relieve constipation, and will take general care of your gut, they'll also help strengthen your bones, treat anemia, aid your nervous system, and they'll boost your energy massively. These are just a few!
As you can see, it's hard to even consider refined sugar when we have dates available.
It's a great dessert option that's easy to make and you can enjoy after any meal through out the week. It is also a good as a last minute breakfast or a snack to take with you.
Actually, I began making banana bread more often so my son could take some with him to school and not have it be a mess on the bus, I just put it in his lunch box where it stays fresh throughout the day.
But it is not only for the kiddos to enjoy, I get my fair share as well, I really like having a slice in the afternoon alongside a freshly brewed cup of coffee, it so indulgent and it gives me that extra boost of energy for the rest of the day.
