We have a brand new recipe for you today! And might become your new summer go-to meal. We mixed a few ingredients and end up with a super saucy and flavourful batch of BBQ Baked Beans. The recipe is easy and affordable, the result…pure magic! 

We are always looking to add easy recipes to our book, recipes that will help us enjoy nourishing and delicious vegan meals that we can have ready in the blink of an eye. We don't always have a ton of time to be in the kitchen and during summer, who really wants to be in a steamy room in front of a stove?  

I certainly don't. For that reason, I put together this recipe. I think it was almost a year ago, I needed a dish for a picnic with friends but I just didn't want to be in the kitchen for too long. Also, I was on a bit of a budget and I didn't have much time to plan for this picnic. I glanced at my pantry, which was more of a dead stare and I found a few simple ingredients that helped me come up with this beauty.

It soon became one of my favourite bring-along recipes. It's very easy to pack and carry. And, since all the ingredients are super affordable you won't be spending a lot of money to make a decent batch of these baked beans. 

This is one of those recipes that everyone loves. It's so comforting so it has you coming back for seconds. And I would dare say this vegan bbq version is even better than the traditional recipe. You get all the good stuff of your usual baked beans plus a rich comforting BBQ taste. 

To make this tasty dish we only need 10 ingredients and less than 20 minutes to prepare. It really is a dream recipe, all you have to do is heat up a bit of olive oil on a frying pan and sauté thinly sliced onions until golden brown, this might be the hardest part of the whole process!

The rest is an absolute breeze. We added the beans, and the tomato sauce to the pan. Then all the spices go in with the rest of the ingredients. We added maple syrup, mustard, smoked paprika and of course, bbq sauce. 

When you get all the ingredients in the pan make sure you give them a good stir and allow the whole thing to simmer for a little bit. This will fuse together all the delicious and rich flavours that we just combined in our pan. 

Now your bbq beans are ready to be devoured. I like to serve them with toasted slices of bread on the side. And I most certainly use the bread to mop up every last drop of sauce left in my bowl.

Ingredients

For the bbq baked beans

  • ½ cup bbq sauce
  • 2 tsps dried smoked paprika
  • 2 tbsps maple syrup
  • 2 tbsps mustard
  • 2 cups navy beans
  • 1 tsp olive oil
  • 1 tsp sea salt
  • 1 cup tomato sauce
  • 1 medium yellow onion (thinly sliced)

For the bread

  • 4 slices whole grain bread (optional: toasted)

Directions

  1. Heat up the oil in a frying pan and roast the onion until golden brown for about 5 minutes.
  2. Add the rest of the ingredients and give it a good stir, heat it up properly and adjust taste.
  3. Serve the BBQ baked beans with bread, enjoy!
