I normally just juice or grill beets when I want to eat them, but this time, I wanted to do something different and special with them and so we have, Beetroot chips.
I hated beets as a child, (who didn’t) and I never understood how anyone liked them. But as an adult, I surprisingly now enjoy them. I buy them fresh and organic from the farmer’s market and take them raw with my morning juice or enjoy them roasted in my salad.
Beetroot is a super food due to its high nutritional content. It has nutrients like magnesium, potassium, vitamins A, B6 and C, iron, folic acid, soluble fiber, antioxidants and protein. It’s very delicious and offers a tender and sweet experience in the mouth.
Apart from being wondrously delicious and beautiful, they are a unique source of phytonutrients called betalains. The betalains that are found in beets provide anti-inflammatory, antioxidant and detoxification support. This wonderful food also has a risk reduction effect for many types of cancer due to its anti-inflammatory and antioxidant molecules.
Making beet chips are about as simple as it gets: 10 minutes prep time, 3 ingredients, one baking tray. Just add some olive oil, bake and enjoy. I’ve seen recipes where they are spiced with rosemary, onion powder, etc, meaning that you can spice to taste but for me, I just stick to salt. They’ll look so pretty to eat once you peel and slice them. And after a bite, you won’t be able to resist as they are so filling and crispy. Last week, I made some for a mid-afternoon snack with plans to keep the remaining for an evening snack. Well, let’s just say it didn’t quite work out that way. We ended up eating them all. That’s how delicious they are.
