Here at vegan.io, we love black beans as much we love tacos. So it just made absolute sense to put them together and make black bean tacos. You are going to love everything about this tasty recipe and how easy it is to make.
We love tacos because of the unlimited options there are. Tacos can be filled with whatever ingredients you can think off, you can easily pull it off. You can dig in your fridge for whatever leftover you have and come out with something good.
If you don't feel that creative or you just don't want to experiment with your food we have a few different options you can make. But I think these black bean tacos have to be the easiest quickest tacos you'll ever see.
Our black bean tacos are super colourful. And we are all about colourful food, it means there are a lot of different nutrients on our plate. Aside of colourful ingredients, we are also throwing some quinoa in our tacos. This combo, the beans and the quinoa make a great vegan protein source. Two of these tacos will give you about 20g of protein!
Tacos cannot be tacos without salsa. But we wanted to keep it as simple as the rest of the elements in these black bean tacos. The salsa is made with tomatoes chopped in small cubes mixed with finely chopped cilantro. Then, salt, lime juice and the chili powder will give us that Mexican flavour we need to make these tacos legit. It is super fresh and it has a nice zesty flavour to it.
The recipe calls for whole wheat tortillas. I think the taste of the black beans and the zesty salsa goes really well with this kind of tortillas. But if you want to make these black bean tacos gluten-free you can easily do it by swapping the flour tortillas for corn tortillas.
Even though, everything in these tacos is delicious, my absolute favourite part is the toppings. The toppings always make any dish stand out and this is not the exception. First of all, we have pumpkin seed that other than being really good for you, they also add a bit of a crunch. I love finding different textures in my food.
The last but definitely not least thing we are adding is avocado. Everyone knows I absolutely love avocados and I add it a bit too loosely to my food. I don't always include it in the actual recipes but I really add it to everything I can. Fortunately, avocado goes perfectly well with our black bean tacos.
This recipe is super easy and you can have everyone at the table make their own tacos. It makes is super fun and everyone can customise their tacos as they please. You don't have to worry about catering to everyone. For this same reason, this dish is perfect for a party or a reunion with friends. You can make a big batch and everyone will be so incredibly happy and grateful!
