I know, I know…French Toast is an actual breakfast dish but it definitely has that dessert-like feeling to it, and we love it for that.
At home it's on the top five weekend breakfast options, we make it more often that I would like to admit but honestly, who can resist to that perfect composition: golden and crispy on the outside, rich and sweet on the inside.
This recipe it's so easy to put together and the result is to die for! You only need 9 ingredients, if you open your pantry I am pretty sure you'll find everything you need in there. How convenient is that?!
There are many French Toast recipes out there, I tried them all! Well maybe not all, but way too many, always feeling a bit disappointed because I couldn't really replicate that golden eggy custard that makes french toast so yummy.
But I finally got it and today I am gonna lend you a little secret that will make you want to stick to this recipe for ever, it was a game changer for me and you'll soon see why.
I added nutritional yeast to the batter, and all my problems went away…..my custard problems at least. Yeast gives it that eggy texture I was so badly craving, and it loaded my toast with the extra nutrients I needed.
Yeast is such a great addition to any meal, it is a great source of protein containing 9 essential amino acids that the body cannot produce on its own and it's packed with minerals, fiber and vitamin B that will give you energy through out the day. There are different kinds of yeast out in the market that are used for very different purposes, so make sure you are getting nutritional yeast.
Lets talk about banana cream now. For this you only need, bananas, a blender, and voilá! It is ready in a few seconds. Seriously, it is that easy, and creamy, and delicious! Remember the more ripen the bananas, the sweeter it will turn out so choose wisely. At home we prefer bananas that are on their last day to get that extra sweetness.
Unfortunately, banana cream doesn't store too well, most likely it will turn brown if you keep it overnight but that is just the perfect excuse to grab a spoon and go at it!
To make this confection even better, just throw a bunch of blueberries on top and get your fix of antioxidants for the day. If you can't find blueberries you can swap them, any other berry you can find will go seemingly well with this recipe.
Serve these straight out off the pan to ensure you enjoy that warm crisp custard on the outside and sweet doughy texture on the inside.
