Here goes a curveball! A delicious, super healthy Blueberry Zucchini Smoothie. Yep, you read correctly! We are making a delicious vegan smoothie with a handful of ingredients that will nurture your body and your soul, all at once.
I made this smoothie for the first time last week and I've been raving about it since. I decide to go outside the box a little bit and find out ways to pack in more nutrition in a vegan smoothie. Well, I found this to be one of the easiest, most affordable, and delicious ways to do so.
We might find putting zucchini in a smoothie a bit out there, but believe me, the result is amazing. The beauty of zucchini is that we can eat it cooked or raw, the taste is super subtle, and it's so good for the body.
And, to be honest, no one will ever know! It's the perfect way to sneak in some veggies if you have peaky eaters at home. I make this smoothies for my kids all the time. And even though they are pretty good with veggies, I have to convince them every once in a while, or come up with recipes like this zucchini smoothie.
The result here is a super flavourful and creamy vegan smoothie. We have, blueberries, almond butter, almond milk. We need a ripe banana to make it creamy and sweet, remember the riper the sweeter it will be. And, I also added some cinnamon to the mix.
I have another odd, secret ingredient in this vegan smoothie recipe. I managed to add fresh parsley to this delicious smoothie. And while I'm not a massive fan of parsley, and I don't really use it much in my kitchen, I do know it's really good for you. So, I let it make an appearance every once in a while.
Parsley contains a truckload lot of nutrients. To name just a few, it has potassium, calcium, magnesium, phosphorus, vitamin A, B6, C, K, and E, iron, folate, zinc. It's also super loaded with many different antioxidants that protect your cells. The list is quite long, which translates into amazing health benefits, such as:
For all these reasons, I gave it a free pass in this vegan smoothie recipe. And, combined with all the other ingredients, the parsley can be unnoticed. It all blends really well together, you get a beautiful consistency, and the taste is amazing!
Throw all the ingredients in the blender and give it a swirl for a couple of seconds. For this recipe, you really want to go all the way until you have that beautiful creamy consistency. We don't want a chunk of zucchini to give away our little secret!
