The best Brussel sprout salad is here at vegan.io! It's crunchy, a bit sweet, a bit zesty and incredibly delicious. As an extra bonus, this salad is super loaded with nutrients to make sure your body is fuelled with nothing but good stuff. 

Salads are usually reserved for summertime but this Brussel sprout salad is a year-round deal. I've made it during the winter holidays as much as during the summer. So you can keep this recipe close by and always have a tasty and fun option handy to save the day and load up on nutrients. 

Have you ever found yourself buying the same ingredients at the store and making the exact same meals over and over again? It can get pretty boring, right? I've been there and I tend to go through faces. Well, this salad was made during a Brussel sprout face I went through. 

I was buying Brussel sprout every single week but I didn't really have that many recipes to switch it up and make it interesting. I was happy with the idea of eating Brussel sprouts on a regular basis but I have a family to feed and they were so over it. 

If I wanted to keep eating Brussel sprouts that often I needed to come up with something, and it had to be something good. We, or maybe I should say, I abused my Glazed Brussels Sprouts with Polenta recipe a bit too much.

Brussel Sprout Salad ingredients

I know Brussel sprouts are not everyone's cup of tea so I always make sure there are other ingredients that will balance out its intense flavour. This time, I've included pomegranate which makes our Brussel sprout salad perfect. 

Pomegranate is widely overlooked but it is definitely a fruit you want to include in your diet. Some people claim that it is one of the healthiest foods on the planet due to the incredible amount of nutrients and health benefits you get from it. Here are some of them:

  • Cure stomach disorders 
  • Reduce heart problems (heart attack and stroke) 
  • May lower blood pressure 
  • Improve skin 
  • Prevent cancer
  • Dental care
  • Treat anemia 
  • Prevent osteoarthritis
  • Control Diabetes 
  • Reduce inflammation

Brussel Sprout shredded

As you can see pomegranate is super loaded with all the good stuff. That's why I always try to get my hands on a few whenever they're in season. My family and I overload on pomegranate, it is super fun to eat! 

I like adding pomegranate to smoothies, baked goods, and salads since they have a very unique sweet and zesty flavour. The pomegranate will add the exact amount of sweetness to our salad and that way balance out the rest of the flavours in it. 

The last ingredient in our Brussel sprout salad is roasted almonds. We really want the delicious taste of the roasted almond in there so make sure you don't skip this step. And don't be tempted to use plain raw almonds. This is what will take your salad from "good" status to "absolutely amazing"!

Ingredients

  • 2 dashes black pepper (ground)
  • 1 lb brussel sprouts (cleaned and thinly sliced)
  • 1 tsp extra virgin olive oil
  • ⅙ oz lemon (optional)
  • 1 medium pomegranate (just the seeds)
  • ½ tsp sea salt
  • 1 cup slivered almonds (toasted)

Directions

  1. Use a skillet and heat up the olive oil ,add the sliced brussels sprouts and sautee them while stirring frequently, for about 4 to 5 minutes, until slightly soft but still bright green.
  2. Add salt and pepper after during the cooking process and let the sautéed brussels sprouts cool down before you mix them with the rest of the salad ingredients.
  3. Adjust taste before serving, enjoy!
