A beautiful delicious meal doesn't have to be complicated and you don't need a gazillion ingredients to make something worth your while. These Cauliflower tacos are the perfect example. With just a handful of ingredients, we are making some real magic.
Tacos have been around for centuries but it seems there's always a new kind of taco to try out. I guess tacos are one of the most versatile food you can ever make. You just have to mix and season the right ingredients and serve them in a warm tortilla. The possibilities are never-ending.
In this day and age we can't be too complicated when it comes to food so I wanted to come up with a recipe that was both easy and super practical. We love to eat tasty food but we can't really spend long hours shopping or in the kitchen cooking overly complicated meals.
Cauliflower tacos might sound hard to make but they're the complete opposite. These tacos are an incredibly delicious meal without the fancy ingredients or difficult preparation. Everything you need you can easily find year-round at your local store.
When I first heard of cauliflower tacos I wasn't sure about it. I mean, I love both cauliflower and tacos, I just couldn't see them together. But I was intrigued enough so I had to do some recipe research.
I saw a few different recipes and I was amazed at the many ways one can cook cauliflower to use it as a taco filling. Cauliflower has a very subtle taste so I guess as long as you use the right seasoning and you pair it with the right ingredients you can come up with pretty good stuff.
For our tacos, I am only using smoked paprika and salt to season the cauliflower. We are relying on the sauce to bump up the flavourful and make them incredibly scrumptious.
The sauce is also simple and made with only 3 ingredients, cajun spice, vegan mayonnaise and a pinch of salt. Just add a bit of water to make it runnier so it's easy to drizzle it all over your cauliflower tacos.
To add more colour, flavour and a bit of a crunch we need a few other ingredients. Red cabbage and sweet corn kernels will have all of this covered and both veggies are packed with nutrients as well, we can't forget the nutrients!
So there you have it. Just put all the veggies on the tortilla, drizzle some sauce on them and you are set to go. These tacos are great for both lunch and dinner and you can be sure the whole family will love them.
This recipe is also great for when you are hosting people. The cauliflower and the rest of the ingredients are super affordable and you can cook them in big batches. You can have everything on the table and just let everyone make their own tacos. This will make the whole eating experience a lot more fun for both, you and your guests.
