Coleslaw Pasta Salad

Coleslaw Pasta Salad

Are you a pasta salad aficionado? Well, this all-time-classic is about to get a whole lot better. With one single ingredient, we are revamping the old recipe to take it up a notch and turning it into a Coleslaw Pasta Salad.

Pasta salad and barbecues go together like peanut butter and jelly. Whenever we get invited to a barbecue, pasta salad has to be the first thing that comes to my mind. Yes, I get excited about being outdoors and spending time with friends but pasta salad has a special place in my heart.

This recipe has been around for ages, and I think we all have our own version. This is probably why I get excited to see it on the table. I really look forward trying the different versions that people come up with and finding new ways to make a good old classic.

Coleslaw Pasta Salad ingredients

One of my good friends hosted a barbecue a few weeks ago and someone brought coleslaw pasta salad. I was immediately hooked! It was like the best of two worlds collided in the same bowl. It had all the good stuff in pasta salad and the crunchy factor of coleslaw.

I wasn't able to get ahold of the recipe at the barbecue but I really wanted to recreate that tasty dish. So I put together a few ingredients and made my own Coleslaw pasta salad version.

This recipe turned out to be very easy to make and incredibly affordable. The base ingredients are carrots, cabbage, scallions and pasta. The dressing is made with a few of our kitchen staples, hummus, dijon mustard, lemon, maple syrup and vegan mayonnaise.

The veggies need to be shredded and sliced thinly. I like them really thin so sometimes I use a food processor for this step, it makes it a lot easier and a whole lot quicker. If you don't need your veggies to be so fine you can use a knife as well.

Coleslaw Pasta Salad preparation

The pasta is cooked al dente and I let it cool down a little bit before adding it to the rest of the ingredients. The dressing ingredients are mixed in a separate bowl to make sure everything is well integrated.

When you have all the ingredients ready just mix in the veggies and the pasta. Give it a good toss and then add the dressing and mix it again. By doing this we are making sure we get a good amount of veggies and pasta on each bite.

Coleslaw pasta salad doesn't need much planning ahead of time. You can have it ready in 30 minutes or less. But I do like to make a big batch and keep it in the fridge. It's a great recipe to quickly and easily fill up a lunch box. So by having it in the fridge, you'll be saving yourself some valuable time throughout the week.

This is how easy it is to make Coleslaw pasta salad! A dish loved by kiddos as much as adults, perfect for a solo meal or to share with friends.
