There are so many curry recipes out there it can get overwhelming to just pick one. To cut your options short I have a very easy chickpea curry recipe. Which is not only easy but so full of flavour, you won't need any other curry recipes for a long while.
Making curry can be a daunting task. Usually, curries require tons of ingredients and very long hours in the kitchen. I love curry, but I can't always spend that much time cooking. To keep things simple, I made something you can put together in 30 minutes or so.
I usually cook curries with more Thai influences since I am more familiar with that cuisine. Have you tried the Mild Hokkaido and Spinach Vegan Green Curry we made last week? Is absolutely delicious!
Even though I'm more familiar with Thai cuisine than Indian, I wanted to switch things up a little bit and put all my Indian spices to work in this easy chickpea curry. I have a jar of garam masala spices in my pantry that I've been dying to use.
Garam Masala spices are the key to making our Easy Chickpea curry so easy, and delicious of course. These spices are widely used in India but you can easily find them at the grocery store or in any Indian market.
You could also venture into making it yourself, but I really recommend getting it from the store. It's very time consuming to make from scratch and store-bought ones have pretty much the same flavour. Just make sure to roast all the spices for a few minutes before you add anything else. All the aromas will come out and the flavours will be beautifully enhanced.
The combination of spices we're using gives your body a warm feeling when you're eating your meal making it very comforting. Also, it's a more calorie dense meal than your usual vegan dish, which makes it even more of a comfort food.
I know the statement calorie dense might make you want to run in the opposite direction, especially if you're looking to lose weight. Before you take another step, let me tell you why calorie dense meals are not a bad thing.
The trick is to consume calorie dense foods that are also nutrient dense to keep your body energised and properly nourished. Otherwise, all you're getting is empty calories that don't do much for you. Yeah, you'll feel super full but you'll also feel sluggish for a while.
Weight management is all about balance! Food will be what determines if you lose or gain weight. Keep an eye on what you eat but if you overdid your calorie consumption just go a little further on your next run.
