Easy Sweet Potato Casserole with Kale

Sweet potato casserole is an absolute classic and an all time favourite in many homes. For this reason, we need an easy recipe that will allow us to enjoy this mouthwatering combo as often as possible. 

What I love the most about casseroles is that you can throw a bunch of veggies in a dish and make wonders. This makes it quite easy to have a healthy heartwarming  dinner ready in no time. And you only need to clean a single dish, you'll be in and out of the kitchen fairly quick. 

This easy sweet potato casserole is very simple yet incredibly flavourful. It has a creamy texture with a slight sweetness to it due to the sweet potato. But we are adding other vegetables such as tomato and kale which reduce the sweetness and makes for the perfect dinner dish.

When I say easy sweet potato casserole I really mean easy. This is the kind of dish you can make in a rush and still amaze everyone at the dinner table. Basically, all you have to do is chop some veggies and throw them in a dish. Then it all goes into the oven so it cooks for 30 minutes. 

We do need something that will bind all the ingredients together. We want to get a bit of everything in every single bite we take. So I made a light and creamy sauce with cashew nuts, corn starch and nutritional yeast seasoned with smoked paprika, garam masala, garlic, and salt.

The sauce is what makes our sweet potato casserole stand out from the casserole crowd. The spices that we are using are quite fragrant and will enhance the flavours of the rest of the ingredients. You will love the aromas coming from your oven while you are cooking this casserole. 

When I was making the sauce, I considered blending in the kale as well. Taking this route would have made the sauce a bit thicker. Therefore, it would be easier to cover all the ingredients in the sweet potato casserole. Also, it would be a great way to sneak in green leafy veggies when you deal with picky eaters. 

I decided to go the other way and leave the kale leaves in there. I love everything about kale, so I really enjoy having those leaves in every bite. Also, I want my son to get used to eating all sorts of different foods and textures. In this case, blending them together doesn't help much.

When you set your sweet potato casserole in the oven there's not much left to do other than wait. Just make sure you are checking on it constantly since the kale leaves can easily burn if they sit in the heat for too long. Burnt kale is not pleasant at all! 

I came up with this recipe a long time ago and I still get requests to make it. You really can't get enough of this easy sweet potato casserole, its hearty flavours and the warm feeling you get from every bite you take!

Ingredients

For the casserole

  • 2 oz kale (remove stems and slice)
  • 2 tsps sunflower oil
  • 24 oz sweet potato (remove skin and slice really thin)
  • 1⅒ oz tomato (diced into small pieces)

For the sauce

  • 1 cup cashew nuts (soak in water)
  • 1 tsp corn starch
  • 1 tsp dried smoked paprika
  • 1 tbsp garam masala
  • 2 cloves garlic
  • 4 tbsps nutritional yeast
  • 1 tsp sea salt

Directions

  1. Preheat the oven to 375 F (190 C).
  2. Soak the cashew nuts in water while you prepare the other ingredients.
  3. place the chopped kale at the bottom of the baking dish.
  4. In a bowl add the sliced sweet potatoes, vegetable oil and diced tomatoes mix well and add it on top of the kale.
  5. Add the sauce ingredients to a blender and blend until smooth.
  6. Pour the sauce over the casserole ingredients and bake it in the oven for about 30 minutes.
  7. Check with a fork if the sweet potato is soft enough, and if not give it a couple more minutes in the oven.
  8. Serve the sweet potato casserole on a plate and adjust taste if needed, enjoy!
