Once, I heard someone said he could live eating just tacos, have a balanced diet and never get bored. That's a lot of love for tacos! But who can blame him? Tacos are amazing, all day, any day! We usually see them at lunch or dinner, so I took upon myself to cover every meal of the day and made some vegan breakfast tacos.
A taco is a Mexican dish consisting of a rolled or folded tortilla filled with whatever ingredients you may please. This is one of the main reasons why we all love tacos so much. The possibilities are endless and you can get as creative as you like. Whatever you're craving and you can wrap around a tortilla, you can call it a taco.
Also, tacos are among my favourite kind of food. The kind which everyone can serve themselves! Everyone can make their own version depending on what they prefer. If you want more beans, throw more beans in there. If you want to pass on the cilantro then do so!
Whenever we have vegan breakfast tacos at home, I usually just put all the fillings and topping on the table and everyone gets to make their own food. I became really fond of this style of eating when my son was a baby and started eating a more solid diet.
We did what is called baby-led weaning, which is when you present a variety of foods to the baby and he gets to pick and choose what he wants to eat. This allows the baby to explore the texture, colour, taste and smell of food. Which, as a result, ignites his curiosity and eating becomes a fun and positive experience instead of a chore.
My son is not a picky eater at all, on the contrary, he often surprises me with his cravings. I don't know if this is in anyway related to allowing him to decide at his own pace what to eat. But it definitely sparked his curiosity and built independence.
Also, it's so nice to eat together as a family and clean up the mess afterwards. It is a much better option than always needing someone to feed the baby. Usually that someone ends up eating a cold meal and there's the cleaning left still.
These vegan breakfast tacos are perfect for this eating style. And since a taco can be made with pretty much anything you can be sure you and your baby will have a well-balanced meal. I always make sure I've included veggies, grains, healthy fats, protein. Everything you need to be well nourished.
You can use either corn or wheat tortillas, I much prefer corn over wheat. But corn tortillas can get hard and chewy when they dry out. To avoid this just sprinkle a bit of water before you heat them up and place them in a damp paper towel, if the water you use is warm even better.
