Garlic Bok Choy with Shiitake

We love our healthy, easy, quick recipes! This Garlic Bok Choy with Shiitake is a super delicious meal that covers all those requirements. And it's now part of our five-star meals here at vegan.io. You will love how simple it is to make and everything you get out of it. 

First of all, since the idea is to keep the recipe simple, you will notice we don't need many ingredients. We are just tossing together a few veggies, some tofu and a side of ramen noodles. This makes it super easy to put together any day of the week or if you are in a rush. We got away from any complications so you can have a beautiful meal in a few minutes. 

The one thing that will never go missing in our recipes is a good load of veggies. We need all those nutrients to keep us strong, healthy and full of energy. For this recipe, we are only using bok choy and shiitake mushrooms.

Garlic Bok Choy with Shiitake ingredients

Both veggies are super loaded with nutrients and are incredibly delicious. That is why we don't really need much more for this dish. A few spices will do, but the taste of the bok choy and the shiitake are incredibly good together. 

Bok choy is really common in Asian cuisine, you see it in all kinds of dishes and it is super yummy. Only in recent years, it's that it made its way to western countries. So a lot of people are not familiar with it or are not sure how to cook it. 

This green vegetable has a mild flavour can be eaten either raw or cooked. I prefer to cook it since I like the texture a bit more. But give it a try, either way, you will be packing on a ton of antioxidants, vitamins C and E, calcium, iron, potassium, folate…the list is so incredibly long. 

Baby Bok Choy

We also have shiitake mushrooms in this nutrient powerhouse. They are super healthy and are even considered a medicinal food in many countries. They are good for boosting your immune system lowering blood cholesterol levels, it helps with skin conditions, helps treat cold, flu, prostrate and breast cancer, and has a powerful anti-aging agent. 

You can find fresh shiitake mushrooms in some supermarkets or even in your local Asian market. I buy them frozen so I can have them handy whenever I need them. Also, frozen shiitake comes with a much cheaper price tag than the fresh kind. If you are on a budget, this is a great little hack. 

As I said, this garlic bok choy with shiitake recipe is super simple. All you need to do is stir fry the veggies with the garlic and the sesame oil for 3 to 5 minutes. Then you add the soy sauce and let the flavour come together for a few more minutes. That's it!

Cook the noodles according to the package and serve the veggies with a side of noodles and drizzle with a bit of chilli oil!

Ingredients

For the vegetables

  • 1 lb baby bok choy (quartered)
  • 7 oz extra firm tofu (sliced)
  • 6 cloves garlic (minced)
  • 2 tbsps light soy sauce
  • 1 lb shiitake mushrooms (chopped)
  • 1 tablespoon toasted sesame oil

For the Noodles

  • 7 oz ramen noodles

For the seasoning

  • ½ tsp chili oil (optional)

Directions

  1. Heat up half of the oil in a frying pan and roast the tofu for all side until golden brown for 5-8 minutes.
  2. Put the fried tofu aside and use the same skillet to heat up the rest of the oil, add garlic and bok choy.
  3. Stir fry on high heat until the bok choy is wilted for about 3 minutes.
  4. Add the mushrooms and stir fry for about 3-5 minutes, add soy sauce and stir fry for another minutes.
  5. Cook the noodles according to the instructions on the package.
  6. Serve the garlic bok choy with shiitake alongside the noodles and sprinkle with some chili oil, enjoy
