High Protein Black Bean Brownies with Sunflower Seeds

My life has been so crazy busy recently, you know the kind of busy that keeps you exhausted at all times to the extent that you forget what day it is or even your own name? Yeah, it’s been a bit like that. And due to this, I have been eating on the go a lot lately. In a spare but extremely short break the other day, I came to realize that many of the recipes I had for on the go snacks and meals were not on here for all of you. So I made a quick reminder, added it to the to-do list, and continued with the day. 

Thankfully, things have slowed down for the day and I can share with you one of my top secret recipes. The high protein black bean brownies with sunflower seeds has been not only a life saver, but a real star in so many points of my life. And now, I want it to be your secret weapon too! 

From family functions to some quiet ‘me time,’ you can count on these brownies to deliver. I even bust out this recipe for my non-vegan friends and they love it!

To make this delicious recipe, you will need 11 ingredients and 30 minutes. 

We start this recipe off with almond milk, black beans, and dates. These 3 ingredients provide us with a good source of protein, iron, magnesium, dietary fiber, copper, and potassium. 

We also add oats, sunflower seeds and oil, vegan chocolate chips, and cacao powder to finish off the delectable little bites. Together, they offer us a source of antioxidants, vitamin E, vitamin B1, vitamin B6, and folate. Pretty much everything we need to keep our bodies moving!

The high protein black bean brownies with sunflower seeds are the perfect go to snack/dessert because they are:

  • A good source of protein – 6g per serve.
  • Family friendly! 
  • Perfect for sharing. 
  • Easy to store.
  • A good source of dietary fiber – 7g per serve.

There is a pretty good chance that you are going to need to store some of your brownies. To do so, make sure that they are cooled down to room temperature and then place them in an airtight container or bag. Then, pop them into the fridge for up to 48 hours. Alternatively, you could freeze them for up to 2 months. Hint: Store your brownies in desired portion sizes to make it easier for you to grab and go!

Ingredients

  • 1 cup almond milk
  • 1 tsp baking powder
  • 2 cups black beans
  • 3 tablespoons cacao powder
  • 12 dates (unpitted)
  • ½ cup quick oats
  • ½ tsp sea salt
  • ¼ cup sunflower oil
  • ½ cup sunflower seeds (roasted)
  • 1 tbsp vanilla extract
  • 1 cup vegan chocolate chips

Directions

  1. Set aside 2 tablespoons of the chocolate chips for garnish later.
  2. Add the rest of the ingredients, except the chocolate chips and the sunflower seeds to a food processor until you get a smooth mixture.
  3. Use a big bowl and stir in the chocolate chips and the sunflower seeds.
  4. Cover a baking dish with baking paper and add the mixture, bake for 20 minutes on 350 F (175 degrees).
  5. The brownies shouldn't be thicker than 2 inches (5cm) otherwise you need to increase the baking time.
  6. Let the brownies cool down before you cut them into pieces. Enjoy!
