Ingredients

For the Indian curry

  • 1 inch fresh ginger (minced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 medium onion (thinly sliced)
  • 3 lbs potato (remove peel)
  • 1 tsp sea salt
  • 4 medium tomato (diced into small pieces)
  • ½ cup water

For the spices

  • 1 dash chili powder
  • 2 tsps fennel seeds
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • ½ tsp ground cumin
  • 1 tsp turmeric powder

Directions

  1. Boil the potato pieces for a short amount of time depending one size 3-5 minutes until they are still not fully cooked.
  2. Heat up the oil in a big skillet and add the spices, stir fry for about 1-2 minutes.
  3. Add onion, garlic and ginger and sauté until fragrant for about 1-3 minutes.
  4. Add the potatoes and stir fry for about 5 minutes until slightly golden brown.
  5. Add the chopped tomatoes and the water and give it a good stir.
  6. Reduce the heat and simmer until the potatoes are fully cooked, add salt and stir occasionally.
  7. Adjust taste before serving, enjoy!
