I don't know why cauliflower rice was invented only a few years ago. This is such a brilliant idea and it makes me want to cook all the rice recipes I can think of! But that would be a lot of rice and my family would throw it back at me by the handful. So, let's keep it civil, let's start with one of my favourite recipes, Mexican cauliflower rice.
There are a lot of reasons why I love this idea so much. I love eating rice but it can sometimes leave you feeling heavy and groggy. Using a cruciferous vegetable instead of rice deals with this problem beautifully.
Cauliflower rice is perfect if you are trying to manage weight or if you are on a keto diet since it's a low-calorie low-carb option. But, full disclosure, this particular recipe is not keto since we are using some ingredients that take it out of that category. But it's definitely a great way to add options to a vegan keto diet.
The texture and colour of cauliflower rice will deceive you! The first time I saw a cauliflower rice dish I couldn't believe it wasn't actual rice. Since cauliflower has the right colour and its taste is so subtle, it is easy to trick anyone.
When I first tried making cauliflower rice it wasn't as popular as it is now. I couldn't find how to make it anywhere so I had figured it out along the way. After a couple of experiments, and maybe a couple of ruined cauliflowers I got it right.
I think I was trying to complicate things a bit too much. Cauliflower rice is surprisingly easy to make. I usually just use a grater to break the cauliflower into little pieces. But you can also use a food processor but if you go this route do it in batches so it comes out more crumbly.
When you use cauliflower rice as a base for any recipe you have the upper hand from the start. Cauliflower is super loaded with nutrients that make it really easy to have a healthy meal and you can add so many different things to it.
This recipe is a good example. The Mexican touches we are adding to it will make it incredibly flavourful without compromising on nutrition. And the ingredients we are using are fresh and colourful, typical of Mexican cuisine.
Mexican cauliflower rice is a one-pot meal. If you've been following us for a bit now, you probably know that in our book that's the best kind of recipe. You get to enjoy a filling and delicious meal without having to deal with a crazy mess afterwards. Once you've had dinner you wash one dish, one bowl and you are out of the kitchen!
