For the mushroom solyanka

  • 2 leaves bay leaf
  • 2 dashes black pepper (ground)
  • 2 cups button mushroom (chopped)
  • 1 tbsp dried smoked paprika
  • 2 cloves garlic (minced)
  • ½ cup green olives (cut in half)
  • ½ tsp lemon zest
  • 1 tbsp maple syrup
  • ½ cup nutritional yeast
  • 1 tablespoon olive oil
  • 1¾ oz pickel (chopped)
  • 1 lb potato (cleaned and chopped)
  • ¼ cup tomato paste
  • 6 cups vegetable broth
  • 2 cups white cabbage (chopped)
  • 2 medium yellow onion (thinly sliced)

For the bread

  • 4 slices whole grain bread (optional: toasted)

For the garnish

  • ½ lemon (sliced) (optional)
  • 2 cups soy yogurt
