At home, we love a batch of delicious pancakes on a rainy Sunday morning. So, today, I'm sharing with you one of my favourite recipes. These Oatmeal pancakes with fried bananas on top are an absolute dream!
I'm always after vegan breakfast ideas and if they come in the form of pancakes, even better. I love pancakes so much but I also love a healthy start to the day. And having that much-refined flour in my belly first thing in the morning is not all that healthy.
So here we have gluten-free vegan pancakes! This is like the perfect trifecta, I can indulge in these beauties without feeling the heaviness of regular pancakes since I used jumbo rolled oats instead of wheat flour. And it works like magic.
Oats are a great substitute when you are making pancakes. They are incredibly nutritious, they are loaded with antioxidants, soluble fiber, they can lower cholesterol level, improve blood sugar, and they have a decent amount of protein. And this is just a quick intro on oats.
Also, when you combine oats with all the other wet ingredients in the recipe they become a bit sticky. This will help bind all the ingredients together. This is where many vegan or gluten-free recipes struggle to get it just right.
You probably already have all these ingredients either in the pantry or the fridge. So it's the perfect thing to make when you are having a lazy morning at home. It will take you less than 30 minutes to have everything ready on your table. No long hours in the kitchen here!
As you might know, I'm no fan of artificial sweeteners. I didn't want to use any of them in these vegan pancakes so instead, I used sweetness found in plants. It's all simple stuff, we need dates for the batter itself and ripe bananas for the toppings. Remember the ripper they are the sweeter they get.
So, no more throwing out all those frowned upon bananas that have a few black spots or are getting too mushy. These oatmeal pancakes are the best way to put them to good use. Or any other recipe that needs an extra kick of sweet stuff!
I love frying bananas, it's so easy. I just add a little bit of olive oil in a pan so they don't stick and that's it. If I want to mix it up I might add a bit of cinnamon or vanilla extract. But the bananas on their own have enough flavour so you don't really need anything else.
We have a whole lot going on in this recipe with very little effort. But just to make these oatmeal pancakes even greater, I also added some Unflavoured sun warrior protein powder. This will load your vegan breakfast with 25 grams of protein!
I like serving these gluten-free vegan pancakes straight away while they're steaming hot. We love making a big stack on the table so everyone can grab as many as they want. Don't forget the fried bananas on the side!
