How does easy to make, highly nutritious, super yummy pasta sound to you? If that sounds like something you are interested in, sit down, relax and get ready because today I am bringing you the pasta with butter beans and beet green sauce recipe.
Now you might be thinking that this is a rather strange combination for the sauce. But it actually makes complete sense. Beet greens (the green leafy parts of a beetroot plant) are highly nutritious, even more so than the red fleshy part of the beetroot we all normally eat. They also provide incredible health benefits as well as being versatile enough to add to many dishes. Salads, vegetable juice, or sautéed, there is little that this amazing plant can’t do. And then we have our butter beans. These beans add a great creamy texture to our sauce, and give a slightly sweeter taste as well as a decent amount of protein.
What makes this meal even better than all of this, is that it can be enjoyed by anyone! Yes, even kids will love this. There are very few people who will say no to pasta.
To make this super easy recipe, you will need 9 ingredients and 20 minutes.
We start this recipe off with pasta, onion, and garlic. Other than carbohydrates from our pasta, we are offered a good source of biotin, vitamin B6, vitamin C, copper, potassium, and dietary fiber.
We then add in beet greens, almond milk, butter beans, and peanut butter. Together, these ingredients supply us with a good source of vitamin K, vitamin A, magnesium, iron, vitamin E, protein, folate, and manganese.

To store any unused or left over pasta and sauce, simply place it in an airtight container and pop it into the fridge for up to 48 hours. For the best results, keep the pasta and sauce separated when storing. Then add them back together when you're ready to heat and eat it.
