I don’t know about you, but I personally LOVE movie night. Granted, it’s not the fun hot date that I once had now that we have a 3 year old son, but I love it all the same. We try to have a movie night at home at least once a fortnight with our son and it’s great. Usually we start our movie a little early so our little man can make it at least half way through before falling asleep. That means dinner time and movie time all wrapped up together. Recently, I discovered this little recipe which we could enjoy while sitting back and relaxing.
Yes, movie night and pasta are like 2 peas in a pod – they just go together! And better yet, it not only keeps the adults happy, but our son loves the pasta too. All round family favorite – you can’t go wrong with this dish.
To make this recipe, you will need 10 ingredients and 20 minutes. You will also need a pot, a pan/skillet, and mixing spoon or spatula.
We begin with pasta. I have left this fairly open for you to choose which pasta you would like to use. Any small type of vegan pasta will work, just be mindful that the nutrition value might change slightly between types. Just ensure you read the packet before purchasing to help you decide which one is best for you.
We then add in spinach, almond, olive oil, shiitake mushrooms, and salt and pepper for taste. With these ingredients, we are offered a good source of protein, vitamin K, vitamin A, folate, magnesium, fiber, and ‘healthy fats.’

This makes it perfect keeping in the fridge for lunch, taking it to work with you, or for lazy nights in where you really don’t want to cook dinner. I personally keep some on hand when I know I’m going to be busy and won’t have time to cook.
