Gather the whole family together! We have peanut butter cookies!! Our cookies are delicious, chewy and the recipe is incredibly easy to make. We are very proud of our creation and we want to share it with absolutely everyone.
Cookies are serious business at home. We love pretty much every kind of cookie that has ever existed but peanut butter are among the top 5 cookies we eat at home. So, I'm always working on creating and improving my peanut butter cookie recipes.
I would dare say this recipe is THE ONE. It has all the flavour and texture you would ask from a peanut butter cookie and I managed to leave out a lot of ingredients that I deliberately try to avoid on a regular basis.
Some of these ingredients are not necessarily bad things but I like to make food everyone can enjoy, especially when it comes to cookies. I have a son and he's neither a picky eater nor he has any dietary restrictions. But we know that's not the case for everyone. And it is a shame to see a kid missing out on cookies while everyone gets to enjoy them by the handful.
For this reason, I try to come up with recipes that are gluten-free and that do not contain sugar. I don't think gluten is necessarily bad and a little bit of sugar here and there is not an awful thing. With that said, I do like having options where they are just not present and we don't have to deal with it.
Peanut butter cookies are supposed to be sweet so we need some other ingredients to make this recipe worth out while. Instead of refined sugar I used dates and one of my favourite sweeteners when baking, apple sauce.
Apple sauce will add enough sweetness without being too overpowering. Also, it's a great vegan egg replacement for baked goods. It doesn't really substitute eggs in other recipes, but at least we have the treats covered.
I recommend using half a cup of applesauce to replace two eggs in sweet desserts. That will be enough to bond the rest of the ingredients together and make your peanut butter cookies sweet, rich and chewy.
Another thing I recommend to make your cookies super chewy and delicious is using creamy peanut butter. Some people prefer the chunky kind. That one will leave little bits and pieces of peanuts in your cookies. At home, we are more into chewy cookies so it really depends on your personal preference.
These cookies take only 15 minutes to make. This is both a blessing and a curse. You will be able to have a delicious batch of cookies in no time. But then you will want to have them all the time!
To avoid going back into the kitchen multiple times I usually just make a big batch. I have never seen one of these cookies go to waste. They are the perfect dessert and I even have them as a post workout snack every once in a while.
