I've been away from Germany for a while now and one of the things I miss the most when I am away is Italian food. Before you say "but, you are from Germany, why Italian food" let me tell you why.
Italian food is like a staple back home, is one of the most popular cuisines in Germany and you can find great restaurants all over the place. The reason behind this is that back in the 50's, 60's and 70's a lot of people from Italy migrated to Germany.
Italians left their country for the pursuit of better working opportunities, education, some had family already stablished in Germany and many others moved for political reasons. The migration was quite big and till this day Italians are one of the largest immigrant communities in Germany.
Of course, with them they brought their amazing cuisine that we can enjoy in many places around the country. A lot of people say we lucked out on that one, especially those who have never had the opportunity to travel outside of Germany.
Last time I was in Germany visiting my parents, we had planned to go out for Italian food to my favourite restaurant but we decided last minute we didn't want to leave the house since we were enjoying a sunny day out in the backyard, we were catching up while watching the kids play, we don't get to have this days often so we needed to make the most out of it.
I offered to craft something for everyone to enjoy, so I came up with this pizza with zucchini, rocket and pesto recipe right on the spot with ingredients mum already had in her kitchen, and since we were outside we cooked the pizza in the grill instead of the oven, and it came out perfect.
If you ever have a chance to cook pizza on the grill instead of the oven, you definitely should! It's like having an actual pizza oven, just use the lid to cover everything, the pizza dough comes out nice and crispy but it doesn't over dry the toppings keeping them moist and tasty.
When you are cooking this recipe, keep a close eye on your pizza just to make sure you don't burn it or under cook it. Since I made mine on the grill, where the temperatures are much hotter it cooks faster, so the cooking time on the instructions is an estimation based on other pizzas I've made in a conventional oven.
This vegan pizza was exactly what we needed to wrap up the beautiful family day we were having, everyone commented on how well the pesto and the zucchini go together, and how adding fresh rocket after you take it out of the oven just gives it a bit of a gourmet touch adding another layer of flavour and texture to the whole thing.
