I get asked this questions all the time, and to be 100% honest I used to struggle with this a lot. You've done your deeds at the gym and you want to replenish your body and it can be tempting to grab whatever is available, you're sweaty, you're tired and most important you are super hungry and your body is crying for food! 

This Popped Teff with Apple and Cinnamon recipe is here to solve this problem. We don't want to put just anything in our bodies after a good workout, you need good fuel to pump back some energy after burning all those calories, you need the proper nutrients so your body can recover and a good source of protein to make those gains happen. 

You will be completely covered with this recipe, and the best thing is that it's quite simple to make, you can whip it all together in less than 10 minutes and you can pretty much make it in the same bowl you are going to eat it from. All this makes it perfect for the morning when you want things to flow easily, especially if you have little time.

Popped Teff with Apple and Cinnamon ingredients

One of the key ingredients in this recipe is popped teff, maybe you haven't heard much, or anything about teff but we are dealing with a superfood here, and once you learn about all the benefits it has to offer, you'll be hooked. You can usually find it in health stores or the bulk section of your local market, I sometimes order it online as well. 

Teff is just becoming popular in countries like the US but it's actually an ancient grain originally from Africa. It's considered a staple in Ethiopian cuisine, about two-thirds of their protein comes from this tiny grain, and they mainly use it to make fermented bread that's served with most meals. 

It's now becoming quite popular because it makes a great gluten free alternative and because of all the nutrients you can get from it. It's packed with fiber and protein, it has a great amount of amino acids, vitamin C and B6, Iron, Calcium, Manganese, Thiamine, Magnesium, Phosphorous, and Cooper.

All this nutrients work together to help your body recover after your gym session and consuming this grain will boost your immune system, it provides long lasting energy, supports bone health, controls diabetes, it balances hormonal levels and relieves menstrual pain, it increases blood circulation and keeps your heart healthy. 

Resorting to teff is a great way to get nourished, but a big bowl of it doesn't sound that appealing, to make this recipe truly special we are mixing teff with soft tofu to get a nice creamy mixture and to make the ultimate protein kick out of this dish. 

To keep adding on the benefits and the flavour, we are mixing in apple cubes, crushed almonds, sliced dates and some cinnamon; is like having apple pie for breakfast, a very healthy apple pie, though.

  • 2 medium apple (cut into small cubes)
  • 4 tablespoons crushed almonds (roasted)
  • 4 dates (thinly siced)
  • ½ tsp ground cinnamon
  • 1 cup popped teff
  • 10 oz soft tofu


  1. In a bowl, mix the soft tofu and the teff. Use a fork to break up the tofu and incorporate the teff until you get a smooth mixture.
  2. Top it off with the rest of the ingredients and sprinkle the cinnamon all over. Enjoy!
