As the weather cools down around here, I find myself drawn more and more to the kitchen. No, not just for the heat coming from the stove (it is a great way to keep warm though), but because I always feel more connected to what I cook. Maybe it’s the extra carbs enticing me, or it’s the cool weather playing tricks with my mind, but either way I’m happy to go with the flow! Hearty, wholesome food is my specialty, so get ready for winter with these amazing recipes.

In tradition of keeping things as simple as we possibly can for our busy lives, all you will need to complete this recipe is 30 minutes and 7 ingredients. The cleanup is fairly easy too, because all you will use is a pot and a blender. Perhaps a spoon as well. We all love a good, easy cleanup. 

To start this recipe off we use garlic, onion, and some olive oil. Together, these ingredients offer us a good source of vitamin B6, vitamin C, dietary fiber, folate, manganese, and ‘healthy fats’. We also add some potatoes, providing us with a good boost of energy and carbohydrates. 

To top it off, we throw in some green beans and roasted peanuts. This provides us with a good source of protein, calcium, iron, magnesium, potassium, as well as an extra source of ‘healthy fats.’

The potato stew with green beans and roasted peanuts is the perfect choice for either lunch or dinner because it’s:

This dish is best served soon after cooking it. However, if you do need to store any leftovers (or if you make a little too much), simply place your stew into an airtight container and place it in the fridge for up to 24 hours. Just remember to reheat before consuming.

Ingredients

For the Stew

  • 2 cloves garlic (minced)
  • 8 oz green beans (washed, cleaned and chopped)
  • 1 tsp olive oil
  • 1 medium onion (chopped)
  • 8 oz potato (washed and diced)
  • 2½ cups vegetable broth

For the topping

  • 2 tablespoons roasted peanuts

Directions

  1. Preheat a big pot with olive oil and roast the onion for about 5 minutes on medium heat.
  2. Add the garlic and roast for about 30 seconds together with the onion.
  3. Add the vegetable broth and boil the potatoes for about 5 minutes.
  4. Take the potatoes off the stove and puree everything.
  5. After you got a smooth soup, add the green beans and boil them in the soup for about 10 minutes until soft.
  6. For serving, adjust taste and add the topping.
