As the weather cools down around here, I find myself drawn more and more to the kitchen. No, not just for the heat coming from the stove (it is a great way to keep warm though), but because I always feel more connected to what I cook. Maybe it’s the extra carbs enticing me, or it’s the cool weather playing tricks with my mind, but either way I’m happy to go with the flow! Hearty, wholesome food is my specialty, so get ready for winter with these amazing recipes.
In tradition of keeping things as simple as we possibly can for our busy lives, all you will need to complete this recipe is 30 minutes and 7 ingredients. The cleanup is fairly easy too, because all you will use is a pot and a blender. Perhaps a spoon as well. We all love a good, easy cleanup.
To start this recipe off we use garlic, onion, and some olive oil. Together, these ingredients offer us a good source of vitamin B6, vitamin C, dietary fiber, folate, manganese, and ‘healthy fats’. We also add some potatoes, providing us with a good boost of energy and carbohydrates.
To top it off, we throw in some green beans and roasted peanuts. This provides us with a good source of protein, calcium, iron, magnesium, potassium, as well as an extra source of ‘healthy fats.’
Just about everything we need to fuel our bodies from one little bowl!

This dish is best served soon after cooking it. However, if you do need to store any leftovers (or if you make a little too much), simply place your stew into an airtight container and place it in the fridge for up to 24 hours. Just remember to reheat before consuming.
