Ingredients

  • 2 cups button mushroom (sliced)
  • ½ cup coconut milk
  • ½ tbsp extra virgin coconut oil
  • ½ tablespoon olive oil
  • 1 medium onion (finely chopped)
  • 14 oz puff pastry
  • 10 oz spinach (chopped)
  • ½ cup tomato paste
  • 1 cup white beans

Directions

  1. Preheat the oven to 390 °F (200 degrees).
  2. Use a 8 x 8 x 2 inch baking dish (21 x 21 x 4 cm), and cover it with baking paper.
  3. Preheat coconut oil in a big skillet and saute the onion for about 3 minutes and add the mushrooms, tomato paste and coconut milk.
  4. Reduce liquid on full heat, add the rest of the ingredients and adjust taste.
  5. The puff pastry lasagne has 3 layers of puff pastry starting at the bottom with puff pastry and between each layer you put some of the filling.
  6. On top you put the last layer of puff pastry and the olive oil, then you poke some holes into it with a fork before you put it into the oven for 30 minutes.
