Not to be a brag but I have to say I have the best home made sauerkraut recipe you can imagine, it's Germany's superfood so it has become a staple in my kitchen. I make it often and I make a lot, unfortunately, on my last attempt I broke my sauerkraut pot. I was absolutely devastated!
It was a sad day! I was fully prepared to get hands on, I had bought the biggest, most colourful red cabbage I could find at the market and was really looking forward to a fresh batch of sauerkraut. it didn't happen, I had to move on and figure out what to do with that beauty of a cabbage I had in my kitchen, I couldn't just see it all, or part of it, go to waste!
Since it's been so hot lately I didn't want to make a soup or a stir fry, instead I came up with this Raw Red Cabbage and Walnut salad that turned out absolutely delicious. Since it came from doing a little improv in the kitchen, it only needs a few ingredients and very little effort to make.
There's just some slicing and dicing involved, the only thing I would recommend is to slice the red cabbage as thins as you possible can, it will make it easier to eat and get a good amount of every ingredients in each bite. Also the thiner it is the more the dressing will reach the small crevices in the cabbage, it will distribute more evenly and it will taste so much better.
This is a great summer recipe, it's fresh and light, and the best things, it's a super healthy option to have as a side dish or as a snack through out the day since each portion has only 396 calories, and the crunchy texture given by both the apples and the cabbage will make you want to skip the chips and grab a bowl of this colourful salad instead.
I am not even kidding!
The main ingredients are of course, red cabbage and apples. The perfect combo, the subtle sweetness of the apples balances out the strong flavour of the cabbage, and together they are a powerhouse of nutrients; your body will be well nourished, filled with antioxidants, fiber, potassium, calcium, and vitamins A, C, and B-complex.
For the dressing, again simple and easy to make, apple cider vinegar, olive oil and salt. This type of vinegar is also known for its great array of benefits, it's used to alleviate many health issues, it helps regulate sugar levels, improve gut health, lower cholesterol levels, aid detoxification, and enhance skin health.
A sprinkle of crushed walnuts will finish this delicious salad. Walnuts are another great ingredient in this bowl of food. They carry essential fatty acids like Omega-3, and anti-inflammatory properties that, together protect the brain, prevent arthritis and promote normal cholesterol levels.
At least something good, healthy and delicious came out of my pot breaking into pieces!
