I like making food from scratch whenever I have the time. That's why I like creating recipes that allow me to make things quickly with simple ingredients. This way I get to make as much fresh food as possible regularly and I know what is going in my belly.
These lentil fritters are the best representation of what I just said (wrote). I have both, the fritters and the dipping sauce ready in less than 30 minutes. You can make these beauties really quickly and the recipe is very easy to follow.
I've included different veggies, legumes, herbs and spices to get a ton of flavour as well as a more balanced dish when it comes to nutrition. The fritters are a great high protein vegan option and with just a couple of them your belly will be full and satiated for a good while.
And, to keep these vegan fritters on the heftier side I'm not deep frying them and I don't use a lot of oil to cook them. We don't want soggy nor dripping fritters. So, I'm using just enough oil to coat the pan so the fritters are crispy and I don't burn anything in the process.
I've made a bunch of different vegan fritters in the past but I hadn't made them with lentils. That is the beauty of these types of recipes, you can switch things around so you never get bored. And it is always fun to get a bit creative and experiment with what you have available.
I wanted to have a high protein vegan meal. I get a lot of requests from all of you for more of these recipes. So, here is a hot tip, incorporating lentils is a great way to bump up the protein in many different recipes.
Lentils are affordable, easy to cook, are jam-packed with nutrients and of course, they are a great source of plant-based protein. I also love how well lentils pair up with all kinds of veggies. For this recipe, I used zucchini, added a few spices and ended with an absolute delight!
We already have a lot going on with the crispy fritters on their own. However, we can't have crispy food without a dipping sauce. So, we are mixing minced garlic, sriracha sauce and a dash of sea salt into soy yogurt. Simple, right?
I used thick soy yogurt to get the creamiest texture possible. You can also use greek style soy yogurt or the regular stuff. But definitely go for whatever will give you the creamiest consistency. The creamier the better!
