I don't know what it is about rice noodles but somehow they have some kind of magic that makes any dish so much more fun and interesting. They are so versatile, they come in different shapes and sizes, you can use them in so many ways and get as creative as you want to when incorporating them into a meal.
I seriously could eat noodles every day of my life! Who's with me?
When I created this recipe the last thing I added was the noodles. I originally had vegetables with the delicious sauce but it needed that little extra touch to make it special and appealing for my son. When trying to feed the little ones it makes a big difference to say "we are having vegetables for lunch", whereas "we are having noodles for lunch". Once again, there it is, the magic of noodles!
Another great thing about noodles is how quick they are to cook, you boil water and they go in there only for a few minutes. Who has time to be waiting around for noodles!
With that said, this has become one of my go-to dishes when I don't have a lot of time for cooking. It only takes 20 minutes to make and there's not a lot of cutting/slicing/chopping involved. If I know I am gonna be very short on time I make the sauce beforehand and keep it in a sealed jar in the fridge.
So we have noodles, a delicious sauce…what about the vegetables?
Red onion and cabbage, that's all you need!
Let me tell you something, I am a new fan of cabbage, it's such a great vegetable that doesn't get the attention it deserves. Cabbage is packed with minerals and vitamins, antioxidants and fiber. It helps keep your skin looking great and it reveals lactic acid, which eases muscle pain and headaches. Also, there are many studies that link cabbage consumption with cancer prevention.
Cabbage is a great addition to any stir fry, it goes well with many other vegetables but in this particular case I really like the combination of the cooked cabbage with the soft noodles, the overall result is a not too soft not too crunchy texture. Balance! It is all about balance!
So there it is! Next time you're having one of those days with not enough hours and you need some inspiration, this quick, delicious stir fry might be a life saver!
