Salad with Artichoke Hearts and Roasted Almonds

For the Salad

  • 10 almonds (crushed and roasted)
  • ½ cup canned artichoke hearts
  • ½ cup cherry tomatoes (quartered)
  • 2 cups lettuce (washed)

For the Dressing

  • 1½ tbsps balsamic vinegar
  • ½ tsp black pepper (ground)
  • 1 tablespoon olive oil
  • ½ tsp sea salt

For the Bread

  • 2 slices whole grain sandwich bread (toasted)


  1. Use a medium size bowl and add all the ingredients for the salad.
  2. For the dressing mix all the ingredients in a small bowl and add it to the salad.
  3. Mix everything well and sprinkle the roasted almonds on top before you serve it with the toasted bread.
