For the vegetables

  • 1 lb baby bok choy (cleaned and coarsley chopped)
  • ½ inch fresh ginger (minced)
  • 2 cups frozen spinach (unthaw)
  • 2 cloves garlic (chopped)
  • ½ lb green beans (cleaned and cut in half)
  • 8 medium scallion (sliced)
  • 1 tablespoon toasted sesame oil

For the sauce

  • 1 tbsp light soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tbsp thick teriyaki sauce

For the quinoa

  • 1½ cups quinoa
  • 3 cups water


  1. Cook the quinoa in water until soft for about 20 minutes.
  2. Boil the green beans for about 10-15 min, then drain them.
  3. Heat up the oil in a wok or a large frying pan and stir fry the scallion, garlic and ginger for about 3 minutes until soft.
  4. Add the rest of the vegetables and stir fry until the bok choy wilts.
  5. Add the sauce ingredients and stir until hot.
