I'm always trying to come up with new healthy and quick vegan breakfast ideas since a lot of people ask me about this. A lot of us don't have loads of time in the morning but we still need a nourishing breakfast to get us going. We need to get fuelled for the day but we don't want heavy meals that will slow us down.
Seems like we need the perfect balance to get it right! And a lot of the time this balance seems like too much work. But we are here to make things easier for you so you don't have to break your head coming up with these ideas.
I'm always looking for ways to make cooking as practical as possible. So, I love recipes I can make in advanced without much hassle. And if I can make a whole batch of it, even better! This makes me feel I'm ahead of the game and I love it!
Having these recipes gives me a ton of flexibility in the morning. I know I already have breakfast ready so I can use that time and energy elsewhere. This becomes very important when you have kids. You never know what they will come up with next so you have to give yourself that flexibility.
These vegan overnight oats are seriously, a lifesaver in my world. I can make a batch on Sunday night and kickstart the week with a delicious breakfast for the whole family. I usually get the kids to help. It's a super easy recipe so it is really fun to get them involved.
You can simply mix everything in a bowl and then fill some jars or glasses with the mixture. This makes individual portions, very easy for everyone to grab their own breakfast when they need it. And, you can make these vegan overnight oats in jars with lids, this will give you an on-the-go option!
Our strawberry oats have a few different ingredients to make them super yummy and really satisfying. I mix jumbo rolled oats, flax seeds, a ripe banana, cinnamon, frozen strawberries, and almond milk. And to give this recipe an extra protein kick, I added unflavoured Sunwarrior protein powder. You can add this to the whole mix or to the individual jars, if you are tracking your protein intake.
I love that these Strawberry oats are such a comfort food, they are sweet and super nourishing. And you can even add a few toasted almond and more strawberries as garnish, it will give them a bit of a crunch and will make them look extra pretty, These vegan overnight oats will make you feel as if you are having dessert for breakfast!
