Sweet potato – possibly the best naturally sourced ingredient ever! 

I’m not going to lie, I love a good potato. My favorite being the sweet potato of course. Everything from the color, taste, and texture, this little pocket rocket ingredient has it all. Most people love potato but worry endlessly about the carbohydrates. Good news my friends – we need a balanced amount of carbs to survive! Sure, we get some from our other vegetables and foods we consume. However, it is important to make sure we have enough to function. This is even more important for those who are very active or hit the gym. 

The sweet potato rounds are great to add into a dish as a side, as an entrée, or even by themselves for snacking.

To make this recipe, you will need 2 ingredients and 25 minutes. You will also need a baking tray, a bowl, and a mixing spoon. 

This one is really simple, we only use 2 ingredients – sweet potato and sesame oil. Both ingredients are each impressive in their nutritional value, offering us a good source of complex carbohydrates, potassium, manganese, vitamin E, vitamin B6, dietary fiber, and vitamin A.

As you will see below, I have outlined that the sweet potato rounds need to be baked. This achieves a crisp result that most people enjoy from their potato. However, there are actually 2 ways of doing it. The second way you could prepare your sweet potato would be to boil them, which is actually the healthier way. It holds its nutrition better, but more importantly, helps to avoid blood sugar spikes after being consumed. The choice is completely up to you, so feel free to experiment

Sweet potato rounds are the perfect side to any dish because they are: 

  • Oh so yummy. 
  • Family friendly. 
  • Perfect for after a workout.
  • Great for dipping or adding to meals.
  • A good source of fiber – 7g per serve. 

To store any left over potato rounds, simply place them in an airtight container and pop them into the fridge for up to 48 hours. Remember to heat them thoroughly before consuming.

Ingredients

For the sweet potato rounds

  • 1½ lbs sweet potato (washed and cut in rounds)
  • 1 tablespoon toasted sesame oil

For the dip

  • 2 tbsps aquafaba
  • 2 tbsps dijon mustard
  • 2 tbsps maple syrup
  • ½ cup sunflower oil
  • 1 tbsp white wine vinegar

Directions

  1. Preheat the oven to 225 degrees (430 F), and cover a baking tray with baking paper.
  2. Use a bowl and mix the potato rounds with the oil, and bake for about 15-20 minutes.
