This is fusion cuisine at its best, tempeh tacos Asian style! With these tacos, you get the best of both worlds, Mexican and Asian food wrapped in a corn tortilla. All the colours and flavours of both came together so nicely to make a delicious feast!
We love to get creative with our vegan taco recipes, there are so many possibilities! You can make so many different dishes, wrap them in a tortilla, add a delicious salsa, and thee you have it. So tacos are all about getting creative and mixing the right ingredients.
I used to end up all ways making the same recipe over and over again. And even though I love vegan tacos, it started to get a bit boring. So, as I usually do I went on to experiment and create something totally different from my previous recipes.
Tempeh is a great addition to vegan taco recipes. It is a great source of plant-based protein, it is a nutrient-dense product, it has a ton of vitamins and minerals, and since it has been fermented, it also contains probiotics which are good for your belly and your digestive system.
I really like the taste of tempeh, but for some people, it can be an acquired taste. I made a marinate that adds an explosion of flavour so the taste of tempeh alone is not that overpowering. Also, here is where we are adding Asian tones to our tempeh tacos.
The marinate is simple, we mixed ginger, garlic, lime juice, maple syrup, and tamari. I'm drooling while writing this, this combination is incredibly delicious. And this tempeh recipe can be used in many other dishes as well, let's say a poke bowl or a salad.
All tacos, even vegan tacos need a good salsa so we made a mango salsa that is fresh, colourful, super tasty, and not really spicy. It's the perfect addition since we already have a bit of a tangy taste from the marinade. I love the combination of sweet and savoury especially if the sweet comes from fresh fruit.
Now that we have everything ready, all we need is to assemble the tacos. Aside from the tempeh and the salsa, we are also throwing in there a few more ingredients. We love our tacos to be colourful and super loaded with flavour. So, we sliced red onion, avocado, and red cabbage.
It is very common to see onion and avocado on tacos, cabbage not so much. But aside from its pretty colour, cabbage is also jam-packed with nutrients and the texture is perfect on vegan tacos. It adds a bit of crunch that will have you addicted to this recipe.
Serve your tacos with warm tortillas, and either assemble them before you serve them or put everything on the table and have a DIY taco fiesta! These tempeh tacos are incredibly delicious, you and your family will absolutely love them.
Oh! And don't forget to add a drizzle of sesame oil before you stuff your face with this delicious vegan tacos.
