Some weekends are meant to sleep in and stay inside. Especially with this cold weather ahead of us, I can forth see a few of those happening soon. And there's nothing better for a lazy Sunday than a beautiful stack of vegan banana pancakes. 

Even though this recipe doesn't take that long to make I much rather make it during the weekends. I don't know what it is about vegan banana pancakes but they seem like such a novelty for a cosy morning at home. 

Now that my son is getting a bit bigger he loves helping in the kitchen. This recipe is perfect for him to start getting his little hands in the trade. He will either help me smash bananas or crush pecans. He's starting with little tasks, the goal is for me to retire soon. A girl can dream, right?! 

I love to see him get super excited in the kitchen. To be honest it can turn into a mess sometimes but it's always worth it. And since we are not rushing to get somewhere as we sometimes do during the week, I get plenty of time to tidy up the banana-covered counters.

Talking about bananas, make sure you use ripe bananas to make this vegan banana pancakes. Especially the ones that will go in the batter since we are not using refined sugar in this recipe at all. The sweetness will mainly come from the ripe bananas and as we well know now the riper the bananas, the sweeter.

We have a few other things to add an extra touch of sweetness to our stack of vegan banana pancakes. Also, it will make them look super pretty and inviting. Chop a banana and a few pecans and put them on top of your stack. Then just drizzle the whole thing with maple syrup and you will have a magazine worthy plate. 

I usually go with bananas but you can switch it up as you please. Berries also go great with these vegan banana pancakes recipe and add a bit of sweetness as well. Pick your favourite fruit, add some colour, mix and match. It is up to you and what you and your family like.

You will love how nice and fluffy these vegan banana pancakes turn out to be. And if you want to go all out, maybe impress someone, or simply treat yourself because you deserve it you can add some homemade Cranberry sauce. It's an extra step but it will make your vegan banana pancakes have a bit of a festive taste.

Ingredients

For the batter

  • 131 ml almond milk
  • 122 g apple sauce
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 medium banana
  • 1 tbsp lime (juiced)
  • 104 g oat flour
  • ¼ tsp sea salt
  • ½ tbsp sunflower oil
  • 1 tsp vanilla extract

For the topping

  • ½ medium banana (chopped)
  • 2 tbsps maple syrup
  • 25 g pecan nuts (chopped)

Directions

  1. Mix the dry ingredients in a big bowl.
  2. Add all the wet ingredients except the oil to a blender and blend well.
  3. Add a bit of oil to a frying pan and add 1/3 cup of the batter per pancake.
  4. Fry from both sides for 2-3 minutes, you should have 2 pancakes per serving.
  5. After finishing the pancakes sprinkle with the toppings, enjoy!
