  • 1 lb baby bok choy (washed and sliced lenghtwise)
  • 1 lb beyond minced meat
  • 1 dash black pepper (ground) (optional)
  • ½ cup chunky peanut butter
  • 2 lbs eggplant (chopped)
  • 4 cloves garlic (minced)
  • ½ lb green beans (cleaned and chopped)
  • 1 tbsp maple syrup
  • 1 tablespoon olive oil
  • 1 medium onion (sliced)
  • 1 tbsp sea salt
  • 4 cups water


  1. Heat up olive oil in a pot over medium-high heat and saute garlic and onion for 1-3 minutes.
  2. Add the beyond meat crumble and stir fry for about 5 minutes, then add the water and peanut butter and bring to boil.
  3. Once the peanut butter is dissolved add the green beans and eggplant and cook until slightly soft for about 10-15 minutes.
  4. Add the bok choy give it a good stir, add salt, pepper and maple syrup, adjust taste before serving, enjoy!
